a low carb version of Blueberry Greek Yogurt Pancakes that is!! Remember my attempt here? I didn't have a cute little house guest but a snowed in day was the perfect time to work some more on this recipe.

I don't know about you, but whenever there is a new article or list touting the benefits of SUPERFOODS, it gets my full attention. Don't we all want to make sure that what we're eating is giving us the maximum health benefit? As someone who's WOE is low-carb, it is always very encouraging to see the staples of my way of eating make the cut. So what makes a superfood, SUPER -- they are whole foods that contain a high concentration of nutrients. In order to be labeled a superfood, it must offer specific health benefits above and beyond its normal nutritional value and optimize your health.

|Pioneer Woman's Pots de Creme a l'Orange|
HAPPY VALENTINE'S DAY LOVIES!! Did you see the episode of Pioneer Woman on Food Network where she made Pots de Creme a l'Orange? I did and I was amazed at how easy this recipe appeared to be -- can it really be that easy?

My eyes are always peeled for recipes that are low-carb and delicious. Now sometimes I find them in the most unlikely places -- at least that is what I thought when I recently saw this recipe at Italian Food Forever. Afterall, isn't Italian food all about pasta?

I grew up in a family of gardeners. Because of that I was exposed to a large variety of vegetables and can only think of one I didn't care for as a kid -- Spaghetti Squash.

and some are not!
I am talking about developing low-carb recipes here. Specifically a recipe for Blueberry Pancakes. Now I have been making a great pancake recipe from Mellissa at I Breathe...I'm Hungry. I LOVE her recipe BUT it is more crepe-like than pancake-like to me. I am wanting a thicker, more *cake* like pancake -- one that can take on blueberries and syrup and hold up.
