Bacon Braised Cabbage


Yes, I am totally among the throngs that think that bacon makes everything better, lol. 
Honestly I hesitate to post this *recipe* - mostly because it is so simple and since it is only 3 ingredients, hardly seems like a recipe at all, BUT on the off  chance that you've never had cabbage made this way, I feel compelled to post. 


Really, only 3 simple ingredients - cabbage (shredded), bacon (as much or as little as you like - 3-4 thick slices is what I use) and salt. Seriously, it really is that simple - but oh, so good!
And for whatever reason, the PERFECT accompaniment to roasted chicken (with roasted pork a close second).


Bacon Braised Cabbage


1 head green cabbage
4 oz. bacon
salt


Cut cabbage in half, cut out the core from both halves, roughly chop the cabbage, and set it aside. Cut the bacon into small pieces. Heat skillet over medium heat.  Add the bacon and cook it slowly until most of the fat is rendered and the edges of the bacon are starting to brown. Add the cabbage, stir everything to coat cabbage with the fat, partially cover the pot, and cook until the cabbage wilts, about 5 minutes. Cook, stirring frequently, until the cabbage is tender, about another 10 or so minutes. Add salt to taste and serve. Freshly ground black pepper can be tasty, too. Serves 6 - each serving 79 calories, 11.68g carbs, 4.8g fiber = 6.88g net carbs.
