Cool & Creamy Cole Slaw

Many times upon hearing that we stick to a low-carb way of eating, people will remark about how difficult that must be and/or that we must eat a lot of specialty things. Well, truth is our diet is pretty ordinary. If you were a guest in our home you may not even know -- we often feed guests low-carb (even desserts) and they don't know it, lol. Many recipes are perfectly low-carb with some minor tweaking -- especially what I call *Old-Timey* salad recipes -- this Cool & Creamy Cole Slaw is just one of those!


First, please indulge me -- we have 15 of the most BEAUTIFUL heads of cabbage growing in our garden -- expect lots more low-carb cabbage recipes in the near future!
Cool & Creamy Cole Slaw

1/2 large head of cabbage, finely chopped (I like it small, like grains of rice)
1 cup mayonnaise (be sure to get a zero carb brand)
4 Tbsp Splenda (or use sweetener of choice)
5-6 drops liquid Stevia
1 tsp salt
1/2 tsp black pepper
1 tsp celery seed

In a 2 cup measuring cup, combine all ingredients except chopped cabbage. Place chopped cabbage in large mixing bowl and pour dressing over. Mix well. Cover and chill in refrigerator for at least 1 hour before serving. Serves 6.


Each serving: 271 calories, 7.06g carbs, 2.5g fiber = 4.56 net carbs
