Company Green Beans

Another great holiday worthy side dish. I was first introduced to this recipe when I was reviewing cookbooks for Gooseberry Patch. 




You can see that review here. I've added my own twists to the original recipe and love how it comes off fussy but is really easy-peasy (isn't that a great feature for a holiday dish?). All that and low-carb too!!

Company Green Beans

3 slices bacon, crisply cooked, crumbled and 1 Tbsp drippings reserved
2 cloves garlic, minced
1/2 medium onion, cut into thin strips 

1 lb package frozen French-style green beans,
1 large tomato, chopped
salt & pepper to taste
1/2 cup shredded sharp Cheddar cheese

In a skillet over medium heat, saute garlic and onion in reserved bacon drippings until slightly softened. Remove from heat and stir in green beans, tomato and seasonings to taste place in greased 8x8-inch baking pan and sprinkle with cheese. Bake, covered, at 350°F for 15 minutes. Uncover and bake an additional 20-25 minutes. Serves 6, each serving contains 102 calories, 7.03g carbs, 2.2g fiber = 4.83g net carbs.
