Herbed Cauliflower Gratin

Been a little under-the-weather the last few days. Finally feel back to par and am in the kitchen again. Back to the subject of side dishes.....


This is one of those super easy, but tastes oh, so good kind of side dishes that I love. The original recipe that I remixed called for potatoes instead of cauliflower. If you serve carb eaters at your holiday table you could easily do both using this recipe.


Herbed Cauliflower Gratin

1-2 Tbsp butter, melted
3 lbs head of cauliflower, cleaned and cut into bite sized pieces
Salt and pepper to taste
2 cups heavy cream
5-oz container Boursin cheese with garlic & herbs*

Butter a 13x9-inch or equivalent sized baking dish. Arrange half of the cauliflower in baking dish; season generously with salt and pepper. In a large heavy saucepan over medium heat, stir cream and cheese mixture until smooth. Do not boil. Pour half of cheese mixture over cauliflower in baking dish. Arrange remaining cauliflower on top; season with more salt and pepper. Pour remaining cream mixture over. Bake, uncovered, at 375°F for about one hour, until golden brown and cauliflower is tender. Serves 8. Each serving is 319 calories, 7.85g carbs, 2.6g fiber = 5.25g net carbs.
