Green Beans Almondine

Totally ignore this dishes *fancy* name -- it is the easiest side dish and VERY economical too!

Our local small town grocery store has 1 lb packages of frozen green beans on sale this week for .79¢. I never saw fresh ones that inexpensive this last summer and our garden ones kind of fizzled out, so at that price, I am stocking up.

Back to how easy this dish is -- well, it is almost embarrassing to post the recipe - it's that easy. That said, it would totally rock the holiday menu BUT we enjoy it regularly (like once a week, regularly) for weeknight, quick-fix suppers.
Green Beans Almondine

1 1 lb bag of frozen, french-cut green beans
1/2 cup sliced almonds, toasted
3 Tbsp fat -- I prefer to use my saved bacon dripping for this to add extra flavor but olive oil or butter is also very yummy
salt and fresh cracked pepper to taste

In a preheated 350°F oven, toast  the almonds in a single layer for 7-10 minutes or until lightly browned. Remove from oven and set aside. Melt your fat of choice in a skillet over a medium low heat. Add frozen beans and allow to cook, stirring occasionally, until beans are desired doneness -- I like mine to be crisp tender so only cook about 10-12 minutes. Add toasted almonds and toss. Salt and pepper to taste. Serves 4. Each serving 203 calories, 9.25g carbs, 4.5g fiber = 4.75g net carbs
