Crunchy, Nutty Cole Slaw

Saturday, January 11, 2014
I am sure you are familiar with the salad recipe that has ramen noodles in it -- that stuff is very addictive and sorry to say, FULL of carbs. Not only the noodles but also (depending on your recipe) lots of added sugar. BUT it is oh, so good. Well, suffer no longer.....this recipe will make you forget all about that bad stuff, lol.

Crunchy, Nutty Coleslaw

1 (12 ounce) package coleslaw mix
3/4 cup halved and thickly sliced celery stalks
1/2 cup sliced green onions
1/2 cup salted sunflower kernels

1/2 cup sliced almonds, sliced
1/2 cup mayonnaise

2 Tbsp granulated sweetener
2 Tbsp white wine vinegar
1 Tbsp sesame oil
1 Tbsp coconut aminos (or soy sauce)
1/2 teaspoon garlic powder
sea salt to taste
1/2 teaspoon ground black pepper

Combine coleslaw mix, celery, green onion, sunflower kernels, and almonds in a large salad bowl. In a small bowl combine mayonnaise, vinegar, sweetener, sesame oil, cocnut aminos, garlic powder, salt, and pepper. Mix and dress salad. Refrigerate for an hour or overnight. Serves 6. Each serving 233 calories, 9.6g carbs, 4.6g fiber = 5g net carbs.

I quit using the Ramen noodles in my crunchy slaw years ago, Gail. Who needs them? Your version sounds fabulous!
