Running behind seems to be the theme of my life this time of year -- seems appropriate to post a day late.

Remember my #2 daughter asking me to ask all you prayer warriors to pray for her dear little friend Keller? He is doing wonderfully and there was an article in our little newspaper about him so I thought I'd share that with you - a GREAT praise report!! Keller UPDATE .

And while on the subject of little boys, I have to show you this photo of my grandbaby -- boy was he a happy little guy when he was at Gigi's house for Easter. He smiled like that every time those ears went on his head, lol. #1 Daughter called last night to say he has his first ear infection. Boo!!!
Easter dinner was a HUGE success with my family. I had never tried bacon-wrapping a pork loin and was thrilled with the results. I used a thick-cut apple-smoked bacon and it gave the pork a slight smokey flavor that was outta this world.
First time try for me was Twice-Baked Cauliflower -- YUM!! I'll share that recipe on Friday for Low-Carb Living.

Everyone's favorite spring salad got a low-carb makeover and was also a HIT!!

The table was simple yet very beautiful - the LILACS were over-the-top GORGEOUS! They bloomed perfectly for Easter and are now on their way out - making room for what comes next in the spring line-up.
This was probably the last holiday family dinner around this table - I've decided to sell it in some down-sizing that I plan for after tax season. It has served me well but in my garage is stored the most wonderful old, restored farm table and I am wanting to use it full-time. Size-wise the farm table is a much better fit. Sometimes letting go of things just makes sense.
Last up, I thought I'd show you my car after yesterday's vehicle vs. deer altercation.
The estimate came back yesterday afternoon to the tune of just over $2,200.00. Thankful that it is just money - and it will be done before my vacation to Arizona at the first of May -- and speaking of that, I am training HARD for my 10K race - not sure I'll be able to run the entire race but I am determined to do my very best.


Looking forward to having next Wednesday off. We always close the office the day after the tax deadline. I plan to spend the day doing some spring cleaning AND catching up with my favorite blogs. I've missed you all! Blessings!!

St. Paddy's Greetings!

For the first time in years, I had no plans to make a big dinner on St. Patrick's. Afterall, the kids are all out on their own and I had to work this morning. No one mentioned wanting to do anything and really, I thought I was pretty fine with that. Until this morning,on my way to work I thought about our usual celebration and it made me a little sad to think that it wasn't going to be this year. Things change -- change is good.

Then I got a text message from #1 daughter -- *Are you making St Paddy's food?*. My response was I didn't really plan too -- PULEEEEEZE!! She must have texted #2 son because he called within minutes asking what I wanted him to do for the dinner. Then #2 daughter chimed in that we NEEDED to do St. Paddy's. So as soon as I was able to get out of work, I stopped at the grocery store and loaded my cart full of the usuals -- corned beef, red potatoes, carrots, turnips, cabbages and the makings for soda bread. Change is good but so is tradition....this is one I enjoy very much.

Old Man Winter & Undergarments!

I said last week that winter has gotten lost on it's way to Nebraska -- now I am beginning to wonder if Old Man Winter plans to show up at all. We are having another gorgeous day here (temperatures in the 60's). The newspaper reported that these temperatures could cause some premature blooming of some plants -- Ya Think? I am thinking that OMW needs to just show up and get the worst over with already.

So I was looking thru some images and came across this wonderful advertisement from 1934. My first thought was WHO wears slips (especially FULL slips) these days? A few years ago I took a part-time position for a few months at JCPenney. I was assigned to the Intimates Department. Not so sure it was a good match. We didn't even carry slips in that location although they were available thru the catalog. Now remember, I am 51. I surely remember wearing slips - we wore dresses and skirts to school everyday until 5th grade when FINALLY they mandated that we could wear slacks on Fridays. My Mom would have been in a state of shock if I hadn't worn a slip. After all, we played kickball and dodgeball and all those elementary games -- how could we have been modest without a SLIP, lol. Anyway, I'm getting ready to head down a rabbit trail here - back to slips, IF you've ever worn one, you are pretty aware that they aren't much protection against winter weather as this ad leads you to believe. Some Cuddle Duds maybe, longjohns for sure, but not a slip. Since we are chatting about underclothing I thought I'd also ask what is the obsession with compression garments and shapeware -- you know, Spanx and the such? Again, consider my age, my aunties (they are 8 & 10 years older than I am) always wore GIRDLES -- Didn't we burn our girdles in the 70's? I was always taken aback by these young girlies coming in and purchasing girdles....I mean compression garments, lol. Frankly, I probably could benefit from such garments (especially after a large weight loss) but I flat-out refuse on principle. Yeah, that is the story I'm sticking to :)

Well, winter should get here or maybe my grandson should -- something to occupy my thoughts so I can stop thinking about underwear!
