Christmas Dinner

I try to not be too rigid about Christmas Dinner -- and yet our menu ends up being almost identical each year. This year's  change up is that we're having Christmas Dinner on Christmas Eve -- works best that way with everyone's other commitments and work schedules.

The menu is very low-carb friendly -- you'll notice potatoes on the menu. Not something I eat but #2 son requested them, so he is getting them. I also will be making a cauliflower dish that is made exactly the same way so it will be easy to do both. With the exception of dessert (I'll post those recipes later in the week), all are tried and true recipes (click on each dish to be directed to the recipe).

Dinner:

Standing Rib Roast w/Au Jus & Horseradish Cream
Herbed Potato Gratin (or Herbed Cauliflower Gratin for the Low Carb eaters)
Roasted Brussels Sprouts

Dessert: 

Low-Carb Brownies
Coffee Ice Cream and 
Caribou's Obsidian Coffee w/Heavy Whipping Cream

    Your menu sounds like a traditional Welsh Christmas meal. I'd say you don't sacrifice much with your low-carb living.

    Christmas dinner menu at this time is a rack of lamb, rice pilaf, haricot verts, right now I am planning a cheesecake for dessert, but that could change.
